Ingredients
For the crepes
- 1 cup whole grain pastry flour
- 1/4 teaspoon salt
- 1 large egg
- 1 cup unsweetened soy milk
- 3 tablespoons unsweetened soy milk
- 1 1/2 teaspoons vanilla extract
- 2 teaspoons butter
- 2 tablespoons water
For the filling
- 1/2 cup plain yogurt

笔记:You can make the crepes ahead of time, stack and freeze them. Thaw if frozen, then reheat the foil-wrapped stack on a baking sheet at 350°F until the crepes are warm and pliable, 5 to 8 minutes, or in a skillet on the stovetop. Assemble as directed.
